The Chasselas grape—a specialty of Switzerland, where it represents the most commonly planted white variety and is responsible for some truly spectacular wines—also has a small Alsatian stronghold, with roughly one hundred hectares to its name. Here, it becomes the reincarnation of a bubbling mountain spring, zipping across the palate with a refreshing tingle of spritz. Alsatian Chasselas—it’s shockingly thirst-quenching!
